Rutabaga with Cheese Sauce

1 small rutabaga (about 1 pound). pared and
cut into 2x 1!2 -inch strips
1 medium onion. sliced
2 medium stalks celery. thinly sliced (about
1 cup)
1 teaspoon salt
Ye teaspoon pepper
1 cup water
2 tablespoons cornstarch
1!4 cup cold water
1/2 cup shredded Monterey Jack cheese (about
2 ounces)
Paprika

Heat rutabaga. onion. celery, salt. pepper and 1 cup water
to boiling in 2-quart saucepan; reduce heat. Cover and
simmer until rutabaga is tender. about 20 minutes.

Drain vegetables. reserving liquid in saucepan. Mix corn-
starch and 1/4 cup cold water; add to reserved liquid. Cook
cornstarch mixture over medium heat, stirring constantly,
until mixture thickens and boils. Boil and stir 1 minute;
reduce heat. Stir in cheese just until melted. Pour sauce on
hot vegetables; sprinkle with paprika. 4 TO 6 SERVINGS.
