Plum Pudding Cake
Plum Pudding Cake
1 cup all-purpose flour*
1/4cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
3 tablespoons vegetable oil
2 cups sliced fresh red plums (7 to 8 large)
1 cup packed brown sugar
1 teaspoon ground cinnamon
1 cup boiling water
Whipped cream (optional)
Heat oven to 350". Mix flour, granulated sugar, baking pow-
der and salt. Beat in milk and oil until smooth. Pour into
ungreased baking pan, 8x8x2 inches. Top with plums. Mix
brown sugar and cinnamon; sprinkle over plums. Pour boil-
ing water on plums. Bake until wooden pick inserted in
center comes out clean, 1 hour to 1 hour 10 minutes. Serve
warm with whipped cream. 6 SERVINGS.
.If using self-rising !lour, omit baking powder and salt.
