Slim potato cakes

Ingredients

Slim potato cakes


Ingredients:
1 lb.potatoes
2 tsps. salt
1 oz butter
4 oz flour
1 egg

How to make those tasty but slim potato cakes:
Boil the potatoes. Drain and mash to remove all the lumps. Add the salt and butter and work in as much flour as the potatoes will absorb. Turn onto a floured surface and knead lightly. Roll into circles and cook on a griddle or frying pan until lightly browned on both side about 10-15 minutes. Serve while still hot, you can use butter for more flavour.
