Spiced Chocolate Tofu Mousse
Tofu is rich in calcium, is an inexpensive source of protein, and is so versatile that it can be used for main dishes, dips and desserts. Touted as being a heart protector, cancer fighter and a safer alternative to hormones during menopause, soy has long been seen as a miracle food.
The special health benefits of tofu have been attributed to two major components: isoflavones and amino acids. Isoflavones are a special group of bioflavonoids found more highly concentrated in soy than in any other food. They are potent antioxidants that help protect against heart disease and decrease the risk of lung cancer, breast cancer and osteoporosis.
The amino acids found in soy reduce levels of "bad" cholesterol and triglycerides in your blood and can also reduce blood pressure.
12 ounces silken soft tofu* at room temperature, drained.
3/4 cup good quality bittersweet chocolate chips or bar broken into pieces
1/2 cup warmed soy, rice, almond or hazelnut milk
1 teaspoon good quality vanilla
1/2 teaspoon cinnamon
1/2 teaspoon cumin
1/4 teaspoon cayenne
* You must use silken soft tofu for this recipe.
Melt chocolate in a metal or glass bowl over a small pot of simmering water, being careful not to let the bottom of the bowl touch the water. Let the chocolate melt slowly, and stir until completely smooth.
In a food processor, combine tofu, melted chocolate, warmed milk, vanilla and spices. Blend until smooth.
If there are any lumps, push mixture through a fine-mesh strainer or sieve, using a rubber spatula. Ladle into individual serving bowls. Can be served warm, or chilled and served later.
