If your recipe calls for lemon peel and juice, always grate the peel first, thensqueeze the juice. ,Removeonly the outer colored layer using quick
downward strokes on the grater. Citrus fruits at room temperature yield more juice than when taken directly from the refrigerator. Rolling the fruit before juicing also helps.
For small quantities of fresh lemon juice, prick one end of a lemon with a plastic pick and press it to release as many drops as you need. Replace the pick in the lemon and store in refrigerator.
